One of the biggest obstacles that people face when trying to get more veggies in their life is:
1. They don’t like the taste
2. They take too long or are difficult to prepare
Well kids, I’m “squashing” (Pun COMPLETELY intended) those excuses today. What if I told you, you can make your veggies taste like dessert! BUT be completely healthy AND have them ready in under 10 min.
Intrigued? I thought so.
I originally got inspired for this recipe by one of my favorite food blogs Chocolate Covered Katie.
This recipe is SO versatile, you could basically use almost any veggie with any seasoning. But, since I’m attempting to make your veggies taste amazing AND hopefully convert a few non-veggie lovers, I’ll just be showing you one way. But by all means, take this method and run with it.
Quick-Roasted Veggies the taste like CANDY
- 2 Zucchini
- 1/4 Eggplant
- 1 Bell Pepper
- 1/4 Small Butternut Squash
- 1 tsp Coconut Oil (yep that’s it. I know.)
- Cinnamon
- Sea Salt,Himalayan Salt, or Coconut Aminos (optional)
-
Step 1: Turn Broiler to Hi
-
Step 2: Foil & Spray a Cookie Sheet (I like Coconut Oil Cooking Spray from Trader Joes)*see below
-
Step 3: Chop your veggies in equal sizes so they will all cook at the same rate. I will usually slice the zuchinni in rounds or 1/2 circles depending on how large it is. The Eggplant & Squash I find works best when you slice it into rounds and then quarter the slices. Just try to keep your thickness consistent.
-
Step 4: Slightly spray your veggies with the cooking spray. Do NOT use the oil yet, that’s for later 🙂 Lightly season with Salt or Coconut Amino’s. I prefer the Coconut Amino’s, but to each his own 😉
-
Step 5: Place in Broiler for 4-5 min. You want them to brown, but not burn and the difference between the two is literally 30 seconds. 🙂
-
Step 6: Remove Tray, Flip Veggies, and place them back under the broiler for 3-ish minutes. Just watch the veggies for good color.
-
Step 7: Once browned on both sides, quickly remove the veggies and place them in a Large plastic Freezer bag** with tsp of Coconut Oil and lots of Cinnamon. Give it a couple good shakes. Seal bag and give your veggies a good massage, they’ve had a rough week.
-
Step 8: Mangia! [/recipe]
**IF you prefer not to use a Freezer bag you can also toss veggies, coconut oil and cinnamon in a large bowl. Still delicious, but your veggies won’t be quite as covered with the coconut oil.
*Hi I’m belowCan you believe you can go from raw veggies:
to ah-mazingly yummy side dish with 1 tsp of coconut oil in under 10 min?
It’s almost too good to be true.
So veggie lovers and veggie haters alike, hope this helps you get in and out of the kitchen fast AND add a little health to your “No Small Life.”

PS…What are your favorite methods for quick cooking veggies?
Megan I can’t wait to try, thanks for sharing. ?
Thanks Sue! I hope you enjoy!!
I love my veggies grilled, but my grill is under two feet of snow so……don’t know why I didn’t think of my broiler! My second favorite way to quick cook our veggies and the one my hubby will eat, is to stir fry them with some peanuts. It actually takes longer to cut up the veggies than it does to cook them! 🙂
Ooo that sounds really good Deb! I know I love using my grill in the summer too, that’s why I like the broiler because you can still get that nice char! ?
We love roasted veggies! Cannot wait to try these.
Aren’t they the best! Hope you enjoy Nikki, thanks for stopping by 🙂
This sounds delicious. Can’t wait to try this out!
Thanks Jess! I hope you enjoy! ?
Yeah I have tried to do these before and they never turned out. Thanks for sharing at the Home Matters LInky Party this week!

Thanks so much Marla! Hope your family likes them as much as we do 🙂
Wow, yum! Love how many veggies you can squeeze into one dish. I love to grill Zucchini, Mushrooms and Onions. Can’t wait to try this- I haven’t actually used the broiler for veggies yet.
Yum! I love grilling veggies in the summer? what’s nice is you get that same “char” in the broiler that you do on the grill. Hope you enjoy Ashley! Thanks for stopping by
Ahhh!!! These sound SO good!!!!
Thanks Susannah!☺️
These sound like an easy way to get veggies into the toddler. Possibly not the husband as if he sees its a veggie I am foiled!!! Must pin it though, great title, really hooked me in!

So glad you stopped by Robyn!! I really like using either the coconut spray OR an oil mister that you add your own oil to and pump to spray. Both are great options?

Thanks! Love to ?
I usually do this when I am roasting a chicken or roast and cook them low and slow for 40 minutes to an hour. Definitely like the idea of smaller slices in the broiler and done in 10 minutes.
visiting from Wine’d Down Wednesday.
Yum! I love oven roasted veggies myself! And now I’m craving chicken haha 🙂 thanks for stopping by!
Wow! These sound great! Going to try this! I just wish that TJs coconut spray didn’t have soy in it! If you like healthy recipes I have some great ones over at my blog; hungrymountaineer.com and we even have a FB page now!
So glad you stopped by, can’t wait to check out your blog! I know, I wish TJ’s didn’t contain Soy either! 🙁 But I have seen a few that don’t in my regular grocery store, so there’s hope 🙂

Thanks Kate! You’ll have to let me know what you think 🙂 So glad you stopped by!
Hey where do you get Coconut aminos? Is that the same as Bragg liquid aminos? Looks delish!
Coconut Aminos and Braggs are different. Same idea but Braggs is made from Soy and has more Sodium. Coconut Amino is slightly sweeter, but I actually prefer the taste. Not sure what grocery stores are by you, BUT I’ve gotten them at Whole Foods, Better Health, and Vitamin Shoppe. I have a picture of them in this post, hope it helps! https://meganreablog.wordpress.com/2014/05/29/help-im-thinking-of-going-gluten-free/
I want to try that spray!! Yummy! Thanks for Sharing on My 2 Favorite Things on Thursday!! Hope to see you again tomorrow!! Love your stuff!! Pinned
Thank you Elaine! That means so much ☺️ that spray is great! Recently, I found one by Pompei at Target and Kroger if you’re not near a trader joes 🙂
Megan I so look forward to your postings. Love everything you post. I will have to try this veggie recipe. What farmers market did u get those from? Yum! Oh and I have never seen coconut amio where do u find that? Love ya ?
Thanks so much Sue! Those were from the Birmingham Farmers Market, but I’ve also gotten the baby Eggplant at Rochester. Coconut Aminos, you have to get at a “healthier” grocery store like Whole foods or better Health. And they also carry them at Vitamin Shoppe. Hope that helps!! 🙂
Thanks Megan, did u noticed how the time clock is so off on here? It said I sent u a response at 5:30 pm and it’s nowhere near. LOL Can’t wait to try the coconut amino. I love the regular one. But coconut sounds so interesting. Girlfriend you should being doing a healthy lifestyle group. I would join.
I did notice the clock is off lol Not quite sure how to fix that haha. Thank you so much Sue 🙂 Such a sweet compliment.
