We could all use a few healthy recipes in our back pocket. ESPECIALLY ones that can fool even the harshest of critics. And really, is there a more friendly food than…
Banana Bread, it’s such a versatile little loaf. It’s there for you be it Breakfast, Dessert, Afternoon Snack or just the perfect gift to give to the neighbor you may or may not wave too on you’re AM commute. You will be hard pressed to find someone who is not a fan of the B Bread.
Last week when we talked about all the things we’re NOT doing for Christmas, I told you that there were exactly 2 things in my baking arsenal and this Banana Bread is one of them. And here’s the thing… if I can make this AND eat it…this will seriously work for everyone lol.
You know from this guide to going Gluten Free that I have a gluten allergy, but if you’ve ever checked out the About me page, you also know that I deal with a corn and dairy allergy. In short, I’m a barrel of fun to go out to eat with. (PS Corn is a crazy tricky allergy, so if you or yours have one, I’d love to help 😉 )
In all seriousness, whether you have food allergies, are trying to eat healthy, OR are cooking for someone who is tackling either of these things, you know it can be a challenge.
As silly as it seems, eating differently from other people can make you feel small and frustrated sometimes. I’ll never forget when my newly diagnosed self having a total meltdown in aisle 7 of the grocery store while trying to find a mustard I wasn’t allergic to. (PS I did! Annie’s Honey Mustard) #TheStruggleIsReal…but it doesn’t have to be forever 😉
So this time of year, whether:
1. you’re trying to eat differently or
2. you’re cooking for someone who is…
This banana bread will be a perfect blessing. You can have a treat without feeling deprived. AND just think about what would happen if you’re sweet little Aunt Hildy, who’s recently gone GF and was only banking on consuming the veggie tray for Christmas dinner, finds out you made Banana Bread JUST for her. Christmas Bliss.
In short, don’t just make this Banana bread for you, do it for your Aunt Hildy and for Aunt Hildy’s everywhere. Because nothing says Merry Christmas like I transformed these brown bananas into complete deliciousness for you.
SIDE NOTE: If you are avoiding Soy try using a mix from Namaste or Breads from Anna.
Gluten-free, Dairy-free, Corn-free Best Ever Banana Bread:
- 1/4 c Coconut oil melted
- 1/4 c Sweet Leaf Sugar Leaf (1/3 the calories of sugar with all the taste)
- 1/4 c Pure Maple Syrup (you could also use honey or agave)
- 2 eggs beaten (Vegans can sub flaxmeal & water)
- 2 very ripe bananas, mashed
- 1/2 c unsweetened applesauce
- 1 3/4 c Pamela’s Gluten-Free Mix
- 2 tsp Vanilla Extract (make sure you’re is gluten & HFCS free)
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/8 tsp nutmeg
Preheat oven to 350. Combine oil, Stevia blend, syrup, eggs, bananas and applesauce; mix well.
add remaining ingredients & mix well
Pour into a well greased loaf pan, and lick the spoon…just kidding…actually not kidding at all 😉
Bake for 45-55 minutes depending on your oven. Just keep a close eye on it and once its out let it cool before you slice it unless you want to end up with Banana Bread crumble 🙂 Equally as delicious, but you won’t score any points in the presentation department. 😉
Don’t let allergies or healthier eating make you and yours feel small this holiday season. Whip up a batch of B Bread for you and while you’re at it, for Aunt Hildy too…
